{Conner’s cookies}

img_23702Conner man is famous around these parts…..meaning our little abode .  For what?  For Conner’s cookies of course :-)!

Conner loves making (helping make) cookies – he is especially good at scooping them out.  Which means we get cookies of all shapes and sizes.  It is a favorite activity for him and I.  And I think it is good that he is learning some basic cooking techniques & fractions.  Here is the latest recipe that we made, per his request to use the mint chocolate chips!

Double Chocolate Mint Cookies

  • 2/3 cup butter, softened (I used 1/3 c. butter, 1/3 c. butter flavored shortening)
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1/2 cup cocoa
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 2/3 cups mint chocolate chips

Directions

  1. Heat oven to 350°F
  2. Beat butter and sugar in large bowl until creamy. Add egg and vanilla; beat well. Stir together flour, cocoa, baking soda and salt; gradually add to butter mixture, beating well. Stir in mint chocolate chips. Drop by rounded teaspoons onto ungreased cookie sheet.
  3. Bake 8 to 9 minutes or just until set; do not overbake. Cool slightly; remove from cookie sheet to wire rack. Cool completely.
